Slabs are stored upright in bundles and viewed vertically, which is not how they will be used, but it is the only way to see the whole surface at once. Ask for the slab to be pulled out and lit. A stone that reads as subtle in a bundle can be dramatic in isolation, and the reverse happens just as often.

Wet It

Water approximates the appearance of a sealed and polished finish and it is the single most useful thing you can do at a yard. Colours deepen, veining gains contrast, and features that were invisible dry become obvious. Every experienced buyer does this and yards expect it.

Look for Fissures and Pits

Natural stone contains fissures, which are mineral boundaries, and pits, which are small surface voids. Both are characteristic rather than defective and neither is a crack. What matters is whether a fissure runs somewhere structurally awkward, such as across where a sink cutout will be, which is a layout decision made against the actual slab.

Check the Whole Bundle

If your kitchen needs more than one slab, they must come from the same block and preferably be consecutive. Ask to see every slab you are buying, not just the top one. Colour drift within a bundle is normal and it is very visible when two drifted pieces meet at an inside corner.

The Broad Pattern

Dark, fine grained stones tend to be dense and absorb very little. Lighter stones with visible crystal structure and coarse grain tend to be more open. There are exceptions in both directions, which is why the pattern is a starting point for a question rather than an answer.

Test the Actual Slab

Ask the yard or fabricator for an offcut, or test a discreet area of the installed top. Water left for fifteen minutes either darkens the stone or does not. That single observation is worth more than any category level advice, and it can be repeated annually in a minute to decide whether resealing is due.

What Sealing Does and Does Not Do

An impregnating sealer occupies the pore structure so liquids sit on the surface long enough to be wiped. It does not create a film, it does not make stone stainproof, and it does nothing at all against etching, which is a chemical attack on the mineral rather than absorption. Dense granites are largely unbothered by acids anyway.
